making matcha cake
Preparation time: 20 minutes
Cooking time: 40 minutes
Total: 60 minutes (+ 3 hours waiting)

Ingredients to make a matcha cake

  • 400 ml vegetable milk
  • 3 tablespoons of granulated sugar
  • 3 large eggs
  • 1 ½ tablespoons (25 grams) of melted butter
  • 140 grams of cake flour
  • 2 tablespoons (12 grams) of matcha powder
  • ½ tsp baking powder
  • (Olive oil
  • 250 ml whipped cream
  • 3 tablespoons of table sugar

How do you make a matcha cake?

Step 1:
Place the milk in a small saucepan and add 3 tablespoons granulated sugar.

Step 2:
Stir this mixture and heat it until it feels warm with your finger

Step 3:
Place three eggs in a mixing bowl and beat with a whisk. Slowly add small amounts of the warm milk while whisking. Do this until you've incorporated the full 1/4 cup of milk.

Step 4:
While continuing to whip the mixture, slowly add the butter.

Step 5:
Hold a sieve over the mixing bowl and add cake flour, matcha powder and baking powder. Shake the sieve until half of it ends up in the mixing bowl.

Step 6:
Now beat it until everything is well distributed. Then add the rest of the ingredients in the sieve and beat again.

Step 7:
Now pour the mixture through another sieve into another mixing bowl, so that the large pieces remain in the sieve. You should now have a thin mixture.

Step 8:
Cover this mixing bowl with foil and put the mixture in the fridge for an hour.

Step 9:
After taking it out of the fridge, give it a stir and put a large skillet on the stove. Add some oil and then pour enough of the mixture into the pan to completely cover the pan. Now bake it for two minutes, turn it over and cook it for another 30 seconds. You should now have one large crepe.

Do the same, only in a smaller baking pan, or at least make creps that are a lot smaller than the first one. Do this until the mixture is used up.

Step 10:
You will now make whipped cream for the filling of the cake. Put 250 grams of whipped cream and 3 tablespoons of table sugar in a bowl and beat it well.

Step 11:
Put whipped cream on the large crepe, but leave room on the outside. Make sure it is exactly the same size as the small crepes. Watch the video so you can see it clearly.

Step 12:
Cover the small crepe with whipped cream and place a new crepe on top. Repeat this process until you run out of crepes. You don't put whipped cream on the top crepe.

Step 13:
Use the remaining portion of the large bottom crepe to cover the side of the cake. This is best done with foil. Then put the cake in the fridge for 2 hours.

Step 14:
Remove the cake from the foil and place it so that the top crepe is on top. Sprinkle some extra matcha powder on top.

Your cake is now ready! Enjoy :)
